Slowly but surely Im making my way to become vegan….Im practically there I just want more satisfying meals to not necessarliy fulfill my hunger, but my fiancés (he’s a manly man and he needs to eat)! This vegan enchilada bake was quite perfect and delicious, even the “nacho sauce”. However, I decided not to bake the entire dish in the oven. I just completed all steps in my cast-iron skillet (cooks the iron right into the food) and served with black rice instead of adding the corn tortillas. You can also try it on a lettuce leaf, for a nice lighter version of a veggie taco. Enjoy!
